About

This neighborhood sushi counter in Caldwell prioritizes precision over volume, with a chef who hand-selects fish daily and builds each piece with visible care. The space operates as a genuine working kitchen rather than a tourist showcase—expect counter seating where you can watch technique, sake pairings chosen to complement what's in front of you, and a willingness to work with what's fresh that day rather than a fixed menu.
