Shige Sushi Express

About

This neighborhood sushi counter in Meridian moves with the precision of someone who knows exactly what they're doing—pristine fish arrives daily and gets handled with the kind of care that comes from years of practice, not franchise protocols. The menu spans the full Japanese repertoire, from quick bowls of ramen to nigiri that showcases the fish's texture and flavor without unnecessary embellishment, along with grilled skewers and tempura that suggest the kitchen operates with real technical skill across multiple disciplines. Unlike corporate sushi chains, this place feels built around what the owner actually wanted to cook, not what focus groups demanded.
