Sushi + Rotary Sushi Bar
About
This independent sushi counter in Chicago operates with the precision of a working kitchen rather than a tourist establishment, where the chef's direct relationship with fish purveyors shapes what appears on the menu each day. The rotating sushi bar model allows diners to engage with preparation techniques while the broader menu—spanning ramen, yakitori, and tempura—reflects the casual, multi-course approach of a proper Japanese izakaya rather than a sushi-focused restaurant playing at versatility.
